No I didn't see the snakehead one -- the first I remember is the bull shark one where he had to have those special hooks forged for the job (supposedly..?)
Hey, hill billy hand fishin' and snagging paddlefish (locals call them "spoonbill") are both activities popular in my home state (Missouri). Snagging basically consists of using a very stiff rod (spinning or bait cast) and usually 100lb mono (or heavier braid) to pull a large treble hook placed about 12-20" above a 1-6 oz bank sinker to snag a very large and fairly tasty cartilaginous fish. Actually the 2-week season should be right about now here in April. I've done it and it's exhausting...but the meat is good. Some people think it's a bit "greasy" but it seems fine to me.
I just like watching people catch huge fish -- it motivates me to remember to go fishing, and sometimes with an English accent.
I also used to watch Croc Hunter back in high school and enjoyed it. I'm not sure that a man who caught venomous snakes in a pair of shorts and without any tools, and who hand-fed chicken scraps to crocodiles would be "spinning in his grave" watching Jeremy Wade ;). And I doubt either will publish in Copeia any time soon. I suspect that if Copeia or Nature were made into a television series it might draw 5-6 viewers....4 if one guy has to take his son to baseball practice.
