I fished the ponds at Osceola OutBack Adventures - only place in North America where you can catch Australian Barrimundi.  3 hour guided fishing.  For me, it trumped EPCOT, where the rest of my family was for the day.

Slower day, (hot best)  but I still caught 40 fish in 3 hours, see attached 9 lb fish that jumped like a tarpon, pulled like a big redfish and were generally delightful.  3 ponds with various sized fish (they raise them for restaurants).  The most active pond had 2-4 pound fish attacking a big popper - 7 or 8 grabs/cast if you didn't hook up.

I did all fly fishing, but spinning gear works as well.  Their mouths are so abrasive that you need to retie every cast if they get to the leader (a few were lip hooks, but because we were slow stripping, others inhaled it deeper.

It was a great experience, Christina and Mike were super guides.  If you are short on time or want to be sure you catch some fish, check it out.  You can also do as an individual versus having to have a partner along.    They also have bass (largemouth and peacocks) available.

This is awesome! Thanks for the info, I'm going down in January and wanted to find some peacocks. I will definitely be booking a trip with them. What weight did you end up taking with you?

Super cool. As good a reason as any to get back down to Central Florida.

I took 2 8 wts with me, and they were fine, could have used a lighter rod for the smaller fish.  I'd recommend a sink tip or intermediate line or take a couple of weighted flys that will get down 5-7 feet if its cooler and you do a slow retrieve.
