Ibn al-Qayyim wrote about Honey :

وَهُوَ أَقَلُّ ضَرَرًا لِسُدَدِ الْكَبِدِ وَالطِّحَالِ مِنْ كُلِّ حُلْوٍ. وَهُوَ مَعَ هَذَا كُلِّهِ مَأْمُونُ الْغَائِلَةِ، قَلِيلُ الْمَضَارِّ، مُضِرٌّ بِالْعَرَضِ لِلصَّفْرَاوِيِّينَ، وَدَفْعُهَا بِالْخَلِّ وَنَحْوِهِ، فَيَعُودُ حِينَئِذٍ نَافِعًا لَهُ جِدًّا

Honey causes less harm to obstructions in the liver and spleen than any other sweet substance. Despite all this, it is safe from harmful consequences and has few side effects. It may cause some harm incidentally to those with a choleric (yellow bile) temperament, but this can be countered with vinegar, after which Honey becomes very beneficial for those kinds of people.

These words were written almost 700 years ago, when Ibn al-Qayyim provided the wisdom of using vinegar with Honey . Same rule applies for Diabetic patients, when they take Honey, it should be combined with vinegar & the drink is called Sakanjabeen, see the link below :

Based on this discussion, we are confident that vinegar also helps to reduce blood sugar levels.

Bile disorder is the first cause of Diabetes, when the liver is unable to process excessive carbohydrates; causing the insulin to jump extra-ordinarily (which results in a damaged Pancreas).

I’ve noticed that many vinegars available in the market are not ideal for regular or long-term consumption. That’s why, I emphasize & encourage that you should learn making the vinegar in your kitchen.. With some trial and error, you’ll develop the skill to brew your own Halal vinegar.
