Blood Glucose response to boiled White Rice
100 g white naan contains roughly 50–55 g of carbohydrates, while 200 g boiled white rice contains approximately 56–58 g of carbohydrates.
Therefore, in terms of carbohydrate content, 200 g of cooked white rice is approximately equivalent to 100 g of white naan.
In this CGM test, our diabetic patient consumed 200 g of boiled white rice cooked with some oil. Blood glucose increased from 145 mg/dL to a maximum recorded level of 210 mg/dL within 70 minutes, representing a 65 mg/dL (44.8%) rise. The glucose level climbed rapidly, reaching 188 mg/dL within just 40 minutes, before reaching its recorded peak. Following the peak, the decline was considerably slower, dropping only to 197 mg/dL over the subsequent 50 minutes—a reduction of just 13 mg/dL. Overall, the glucose rose approximately 3.6 times faster than it declined, demonstrating a rapid glucose spike followed by a prolonged and slow return toward the starting level.
We are comparing different breads and varieties of rice with the blessed barley bread, so that you can appreciate why the grain chosen by Allah for His beloved Habeeb-e-Mustafa ﷺ, holds such a distinguished place and why barley stands apart from the rest.
