BG response to White Rice Bread
After consuming 100 g of white rice flour bread, the blood glucose of our Diabetic patient started at 142 mg/dL at 9:01 AM. At approximately 1 hour (10:06 AM), glucose had risen to 200 mg/dL, representing a 58 mg/dL increase from baseline. At approximately 2 hours (11:01 AM), it reached 204 mg/dL, a total rise of 62 mg/dL. This indicates a rapid and sustained glucose elevation, with the level still slightly increasing between the 1-hour and 2-hour readings rather than beginning to fall. In this test, just 100 gm of white rice flour bread therefore produced a substantial post-meal glucose spike.
This test is for only 100 g of rice-flour bread. If you actually weigh your usual meal, you may be surprised to discover how much carbohydrate you are consuming. A single meal can easily contain more than 200 g of white-flour bread, while a single plate of boiled white rice may weigh 300 g or more. In Hyderabad, it is common for people to eat Roti first and then have one or even two plates of rice, creating an enormous carbohydrate load in a single meal. And the famous Indian Thali can be even more concerning—often weighing 1–1.5 kg of food and containing more than 15 different items, including roti, white rice, papad, vegetables, daals, and sweets. Same is the case for Buffets offers at restaurants. The more you combine different kinds of foods in a single meal, the more burden you put on your digestive system & major organs.
