For barley soups, we prefer using Barley Saweeq (Sattu) including the husk/chaff. However, if you choose to cook with barley grains, then hulled barley is a much better option than pearl barley. Hulled barley is a whole grain with only the tough outer husk removed, while pearl barley is polished and loses its bran layer in the process. As a result, hulled barley has a chewier texture, a richer, nuttier flavor, and retains more fiber and nutrients.

We made a camel meat soup using hulled barley, and a portion of it was separated and blended like a Hareesa. The cooking process can be seen in the video below.
