{Tibb-e-Nabwi} Dates Jaggery

There are many countries like BanglaDesh where sugar (& finally jaggery) are also obtained from date palm trees. Several slits are made into the bud of palm tree and sap is collected in pots that remain hanged on the tree. Then, the sap is boiled until it thickens, after which it is poured in molds & left to solidify as cake blocks.
 
Saudi Arabia is the land of date palms but I have never seen dates-jaggery here, it should be the part of Arabian culture as I guess. Palm pith (Jummar جمار) as food was common in the times of Prophet Muhammad Sallallaho Alaihe Wasallam & dates jaggery in fact is the evaporated sugar of palm pith but unfortunately, Jummar has been forgotten by Arabs & Ajam.
 
One of my friends from Bangladesh gave me a big cube of date-jaggery & I am sending you the picture to taste its sweetness by your eyes.
Looks like there is a pump up there in date palm tree which pulls up the sugary sap (water), but how the soil is converted into sugar is beyond a human's imagination. There is Someone Who is Controlling the manufacturing.
