Diabetes & Ragi Bread
Ragi (Finger Millet) is considered a healthy grain, it is high in Calcium. It has a nutty / earthy flavor & is popular in southern parts of India. Because Ragi is Gluten free, it is not easy to cook its bread.
The Diabetic patient took 100 gm of Ragi Roti, after 2 hours, Blood Glucose jumped from 146 mg/dl to 199 mg/dl, a rise of 53 points, & it came down to pre-meal level after 3 hours.
In a healthy person, insulin and hormonal responses usually bring down a high-carb glucose spike within about 2 hours. But in a diabetic patient, glucose can remain elevated much longer.
Our observations show that for a person with Diabetes, White Naan may take around 5½ hours to return to the starting level, while whole-grain breads may take around 3–3½ hours.
