After refined white flour (Maida/Meda), white rice has emerged as one of the most widely consumed staple carbs in the world. However, for people living with diabetes, both refined white flour and white rice are the most harmful & can cause significant blood-glucose spikes, particularly when consumed in large portions.
A diabetic family member consumed a large/full plate of Mutton Biryani weighing approximately 450 g (no medicine taken). The meal contained around 100 g of mutton, with some weight for the oil.
The blood glucose level rose by approximately 96 mg/dL above the pre-meal level. More importantly, it took 6 hours to return to the pre-meal reading.
If a person eats another carbohydrate-containing meal while blood glucose is still elevated from the previous meal, the second meal may add to the existing glucose elevation and result in a much higher reading.
Interestingly, this Biryani contained mutton and oil, both of which can slow gastric emptying, yet the glucose rise was still substantial. This demonstrates that adding protein or fat does not necessarily prevent a high glucose spike when the meal contains a large quantity of refined carbohydrate.
There are many traditional whole-food carbohydrate options available. But among the foods emphasized in the Tibb-e-Nabawi diet, the blessed Barley bread is particularly important to learn about and prepare properly.
