I've followed and tweaked the instructions a million times over, but
can't for the life of me get this working.

I start TB and get: "Enter your password for ***@rockfan.com on
localhost"

I enter my password and get: "Sending of password did not succeed.
Mail server localhost responded: Comms Error from da...@rockfan.com,"
then "Login to server localhost failed."
Then I get the option to retry, enter a new password or cancel. No
luck at all.

I've enabled logging but I now have a folder full of file, and don't
know which part of which one to post.

I've tried this with both mail.com and aol addons...

MailDotCom are now using AOL for there email accounts. If you add
your maildotcom domain to the aol extension Thunderbird should be able
to access the account.

I've tried both aol and mail.com addons...

I go: File>New>Other Accounts>Webmail
Your Name: David
Email Address: ***@rockfan.com
Incoming username: ***@rockfan.com
Check "Download Messages Now
Finish

Then go into Tools>Account Settings and change the SMTP server.

Then when I log in/restart TB I get prompted for a password, at which
point I can't get any farther...

You need to uninstall the maildotcom extension. Is there a message in
the error console
