Hi all - boy, I really need to be better about getting on here, I
apologize!

Michelle, sorry about the eggplant dish! I debated putting eggplant
on the menu at all. I LOVE it, but I know a lot of people don't.
Plus it's risky to cook - often comes out mushy or undercooked. OK,
lesson learned. No more eggplant unless it is a minor ingredient!

Some dishes we've enjoyed in the last couple weeks: the chili-lime
chicken kabobs, and the stir-fried pork with scallions. Both were
super easy and enjoyed by the whole family. I really like the chicken
tortilla soup also, though the rest of the family was lukewarm on
it.

I hope you all are doing well and having some good meals!

Yeah, I haven't posted recently either. I was wanting to mention that
I just love the ease of the classic roast chicken (and the price), but
I am wanting some tips on how to do something different. BBQ? Garlic?
Ny ideaas?

Also (from a couple of weeks ago) I wanted to report that the chicken
and ravioli carbonara went over very well. I found that preparing it
was a challenge because the ravioli wasn't getting soft and I had to
keep adding chicken broth. But it turned out well and I was happy to
have that idea.

I'm glad to see tomato soup on the list again this week. It went over
really well in my house last time and this time I plan to serve it
with the roasted garlic bread (which my kids just love). I don't
strain the soup, because I like it thicker.

What's going on in your kitchen?

My family also enjoed the chicken kabobs and at first I thought the ingredients might be a bit scary, but they all meshed well together and the taste was spectacular.
 
We also like the stir fry pork and it was awesome.
 
I made the turkey burgers but I used bread crumbs instead of old bread and the burgers were squishy to make and to cook.
 
That's about it from last week, now to begin cooking for this week!

Hi all – if you plan to make the Crab Cakes this week and you are a CostCo shopper, they have a 1-lb container of fresh lump crabmeat for about $16.  This is higher than you’ll pay for 1 lb in smaller cans at the grocery store, but it is fresh and absolutely delicious.  The crab cakes are a favorite for our family & they freeze just beautifully.  A bit of a splurge, but definitely worth it every couple of months!

I'm having a horrible time finding my way with Coupon Mom and I miss
the weekly posts from Lisa. I find the Coupon Mom site overwhelming
and not easy to navigate. Anyone else have this problem? Anyway,
normally I prefer new recipes, but I was VERY happy to have repeats on
last week's menu, because I knew my way around those recipes and
didn't even attempt to figure out coupons. I noticed the difference
in savings, though.

We made the tomato soup and the mex turkey burgers again, too. They
are a big hit in our house.

Hi all,

Last night I made the "Chicken and Ravioli Carbonara", with the leftovers
from "Classic Roast Chicken" well the ravioli dish was not a big hit with my
family! Here I thought it was so easy and tasty too! My girls said the sauce
was not to their liking, maybe next time I'll try using the bottled Alfredo
sauce on top! Anyone else have " thumbs down" on this meal??
