Freezer Meals

Hi all - how are the freezer meals working out for you? I have been
making them, but now I am reluctant to actually use them because I
love the feeling of having them in the freezer! Next week I will
start to use them on Wednesdays, as that is the day we rush around
driving to dance lessons, etc. Looking forward one night off (sort
of!) each week.

The only one I've done so far is the chicken nuggets, but I really
like the idea of them, because it really is nice not having to worry
about too much prep.
Seems like pasta dishes and casseroles always make good freezer
options because it is virtually no more work to make one serving lots.
My biggest problem with anything in the freezer is I always forget to
thaw!

I did the chicken nuggets, too, but cooked them first before
freezing. That way I can warm and serve. I will try the microwave to
see how that goes. I will also be using Wednesdays for my freezer
meal day.

I leave the chicken nuggets frozen in their lunch bags and by the time they get to lunch, the chicken is defrosted and good.
 
My daughter doesn't like them all the time, but in a pinch they are fine.
 
Are you guys pre-cooking them and then freezing?

Michelle – I usually just coat them, and then freeze.  I figure it’s almost as easy to just cook them as it is to heat them up, and I believe they stay juicier that way.  I never thought to use them in lunches – my girls would probably like that!

I was glad I cooked them, since it was easier to freeze them (don't
have to worry about them sticking to each other if you let them cool
first) and they could be microwaved less than a minute to prepare for
dinner. We had them Wednesday night and next time I will make a big
batch so we have them on hand always. Very convenient and quick
dinner. Oh, and I just LOVE Them in my salad, too.
