A MUST HAVE DATE NIGHT!

If you are going to try a date night dinner- this one is it! Although
it takes some time- if your up for a night in the kitchen with your
significant other...put on some good music- pop the cork and have some
fun!
6- 6oz. chicken breasts
1 C cooked crawfish tails-( I used shrimp)
6 oz. camembert cheese
1/2 tsp. your favorite seasoning- oregano/garlic/pepper/cayenne/
thyme/paprika/basil-mixed together.
2 C bread crumbs
1/2 C milk
1 egg
3/4 C flour
3 tsp. olive oil
1 C dried apricots- I know- I'm not not an apricot person
either but believe me- it works!
1 C water
2 tsp. granulated sugar
1 tsp. corn starch
1 Tbl.. lemon juice
1/4 C apple juice
3/4 C whipping cream
1 C chopped figs
1 Tbl. fresh chopped tarragon

OK then....your ready to permeate your kitchen with the smells of a 5
star restaurant! Pound the chicken breasts flat....top w/ crawfish or
small shrimp- chopped if large and 1 oz of cheese. Fold and roll to
encase filling. refrigerate for one hour...at this point grab another
glass of Vino and have a dance with your mate........or prepare in
advance, maybe tomorrow nights dinner?

Blend the seasonings w/ the bread crumbs. Combine the milk and the
egg. Dust chicken w/flour,dip into the milk and dredge w/ bread
crumbs.

Place on a baking sheet and brush w/oil. Bake in a preheated oven-350
degrees for 25-30 minutes.

In a sauce pan- boil the apricots in water for 5 minutes. transfer to
food processor and puree. reserve the water. Stir the sugar into the
water. Mix cornstarch w/lemon juice, add to water and simmer until
thick. Pour over the apricots and blend.

OK- OK- your almost home!! Don't give up yet!

Return to sauce pan and stir in the apple juice, heat BUT do not boil.
Add the cream,figs,tarragon- simmer GENTLY for 10 minutes.

Place cutlets on serving plate,slice on a diagnal and ladle around
the plate w/ sauce, SERVE!

You can serve this dish w/ a side of garlic whipped potatoes- and
greens- Spectacular!!

That sounds so good, I could just imagine it with a blush champagne.
I would probably use shrimp too, not a big crawfish fan.

Was the sauce sweet?

actually the sauce is not real sweet- it's more of a smooth,mellow
flavor as it allows the mild flavor of the cheese and the shrimp to
come through- nice texture too...It's impotant to season up the bread
crumbs for your chicken....Jim really liked this dish!
