I celebrated Cinco de Mayo with a lunch for myself, a girlfriend and
my sister. It wasn't a huge fiesta or anything like that but a
tranquil, but chatty lunch on my breezeway...it was a beautiful
day..weather wise, so we enjoyed homemade iced tea with slices of
strawberries and lemons.....Yes- I did brake out a Corona but that was
for my fish batter- my sister walked in around 11:30am and saw the
open Corona on my table and said " Are You DRINKING a CORONA
already?!!" And what if I was? After all... It was Cinco de Mayo...and
besides wasn't I having a hell of a week...Oh yeah...it was only
Monday- well anyway....I served up fish tacos with a creamy chili
sauce and a Mexican salad- which I believe I posted on here before but
I'll post again just in case.....the food was so colorful and
pretty...it was nice just to look at the salad- DARN! I always forget
to take pictures----TRUST ME- it was PRETTY! Here are the recipes...

FISH TACOS: 1LB COD FISH
1 CUP FLOUR- PLUS A LITTLE EXTRA TO DUST FISH
1 TSP BAKING POWDER
1 EGG
1 CUP BEER- I USED CORONA- BUT DARK BEER IS
GOOD TOO!
SEASONING OF YOUR CHOICE
OIL FOR FRYING
TORTILLAS

DUST FISH WITH FLOUR- THEN, IN A BOWL MIX EGG,FLOUR,BAKING
POWDER,BEER AND SEASONING-IT SHOULD BE THE CONSISTANCY OF PANCAKE
BATTER. HEAT OIL IN A PAN UNTIL HOT- DIP FISH IN BATTER AND FRY FOR A
FEW MINUTES ON EITHER SIDE (4-5 MIN.) FISH SHOULD BE GOLDEN BROWN AND
CRISPY-DRAIN ON PAPER TOWEL LINED PLATE AND RE-SEASON WHILE HOT. IN
ANOTHER PAN HEAT A FEW TABLESPOONS OF OIL AND FRY TORTILLA ON EITHER
SIDE-LIGHTLY! THEY BROWN QUICKLY SO WATCH CLOSELY. RESERVE TORTILLAS.
TO SERVE THEM- I CUT UP TOMATOES,ONIONS AND CABBAGE- STUFF TORTILLA
WITH FISH AND TOP W/ TOMATOES,ONIONS,CABBAGE OR WHATEVER YOU LIKE. I
ALSO MADE A SAUCE OF 1/2 MAYO, 1/2 SOUR CREAM, 2 TBLS CHILI SAUCE, A
FEW DROPS OF HOT SAUCE AND ANCHO CHILI POWDER- STIR TOGETHER AND
DRIZZLE OVER TOP OF FISH TACO---SOOOO GOOD!

MEXICAN SALAD:THIS SALAD LOOKS LIKE CONFETTI-SO PRETTY!

CHOPPED ROMAINE LETTUCE
CHOPPED AVACADO
CHOPPED TOMATO
CHOPPED RED ONION
BLACK BEANS
CORN- FRESH OR FROZEN
SLICED RADISHES
FETA CHEESE
MIX ALL TOGETHER LIKE YOU WOULD A SALAD- NO DIRECTIONS NEEDED HERE..I
HOPE!

DRESSING:
EQUAL PARTS LIME JUICE/OLIVE OIL APPRX. 1/4 C EACH
2 TBL. HONEY
1 CHOPPED JALEPENO PEPPER
1-2 CHOPPED GARLIC CLOVE
2 TBL. CHOPPED CILANTRO- WERE YOU WONDERING WHERE THAT
WAS??!
S&P TO TASTE
OF COURSE YOU SHAKE THAT ALL UP AND POUR OVER SALAD-
WONDERFUL,FRESH AND DIFFERENT! THANKS TO ALLRECIPES.COM FOR THAT!

It was a relaxing day- until of course UNTIL I found a baby bird in my
yard- I thought the mother kicked it out of the nest so YOU KNOW I had
to rescue the little critter- For those of you who don't know me- this
is not unusual for me to have a baby squirrel,rabbit or some other
orphaned bit of wildlife that I am nurturing...so I made the usual wet
dog food with a hard boiled egg yolk for dinner and quickly set up
camp for our new houseguest. This little one didn't even have it's
eyes open-no feathers- SMALLER than my thumb!! But of course it had an
appetite...It was at the right house!..Now, normally I would call
AARK- a wildlife center that takes wounded/abandoned wildlife- GOD
BLESS AARK- a wonderful place! But it was getting towards dinner time
and the kids were on their way home, traffic- you know what I mean-
NOT a good time to be heading out the door with a baby bird....so
beings that I have experience, I thought I'll feed him/her AND if
it's still alive in the morning I'll take it to AARK- I really didn't
think it would be alive because it was so tiny plus it had a bloody
nose from the fall that I had to put pressure on it's fragile beak to
stop the bleeding-this poor little thing got off to a rocky start in
life...But after setting the bird up in a shoe box with a heating pad-
set to LOW and material wrapped around the heating pad to make sure it
was warm but not TOO warm- the baby bird was settled in for th enight
and had it's last feeding. Well, in the morning,I woke up at 5:45am
for the 1st feeding..... I heard nothing- I was afraid to look in the
box for fear of what I had expected- but I opened the lid and it
moved!!! It was a miracle that this little bird had survived the
night- so I got up and fed him breakfast, which it eagerly ate. As the
day wore on- the little guy was growing on me- I was bonding with our
new houseguest- and now I was ready to name him/her. I told my girls
we could only name the baby bird if it survives the night which of
course it did, so after some thought we decided since the baby bird
was found on Cinco De Mayo- we should call it...Corona!! So, now the
bird had a name. When my mom came over to see Corona- she saw where
the bird had fallen from and since the nest was in my window box- and
the bird was pretty far from the nest plus a piece of the nest had
come out with the bird...she felt that another bird had tried to
snatch it from the nest...maybe a crow or Blue Jay...they are known
for this. I was upset that maybe I should have put the bird back in
the nest with it's brothers and sisters, mom and dad. I wanted the
bird to be with it's parents where it can learn how to survive,eat and
just be a BIRD!! So I called AARK and told them the story and they
said if the mother bird threw it out of the nest, she wouldn't carry
it that far away...another bird must have tried to snatch it...they
said I could put the baby bird back into the nest- EVEN after caring
for it for 24 hours! So I put on gloves and carried Corona back to the
nest and saw her siblings with their beaks open- waiting for the
return of food from mom...None of them had their eyes open yet
either......so I quickly put Corona into the nest and nuzzled her back
so she was nice and secured, then I stood back and waited anxiously to
see what the mom was going to do...there she was!! She looked puzzled
at first but then she flew out and got a worm and fed her babies...ALL
of them! And they are still in there- even Corona with the scuff mark
on her beak!! I am so glad they are all together where they belong! SO
that was my Cinco de Mayo- Buenos Dias Senoritas and Senores!!!

Renee... that is a lovely story... from the corona fish batter
straight through to little birdie Corona. Thanks!!
