Healthy Make-Ahead and Fast Lunches

I'm looking for ideas for relatively healthy, quick, make-ahead lunches. I sometimes eat at work (fridge, microwave) and I sometimes run home and walk the dog (full kitchen, but obviously short on time).

I'm hoping to make a batch of something 1x per week and eat it for 3-4 days, with a supplemental leftovers or slice of pizza on Fridays :)

Fajitas! I saute up some chicken, peppers, onions, etc... pop it in a tupperware container, put a couple flour tortillas in foil or a baggy, and run out the door.

Sometimes I roast a whole chicken (slather on EVOO and herbs, place on top of onions/celery/potatos, 400F until it's done) and divide it up for lunches.

Basically, any dinner meal that results in leftovers is a win. Even pasta is great but a bit carb-heavy sometimes.

I use ground turkey to make tacos. Same as Alli said above, throw it in some tupperware and some tortillas and your good to go. I also have a go to meal of meat+chickpeas+lentils add what ever spices you like.

I like to make several components for salads that can come together quickly and be mixed and matched. For example, yesterday, I roasted a bunch of beets and cooked big batches of garbanzo beans and some greens. I keep the components separate and add other dressings or fried tuna or nuts or whatever for different days so its not so monotonous. i do this, too - i cook on sunday, and divide whatever i make into 4 or 5 tupperwares, so it's grab-and-go in the morning. usually it's soup, but this week it's veggie casserole with polenta (spoon the polenta into the tupperware first, and then the veggies on top, so it's a nice layered dish. pretty!)
