Moving files

Hi, all,
This feels like a 101 question but it is tripping me up.
I'm on a mac. When I copy/paste files from one server location to the directory connected to Archivematica, it changes the date created. Do I care? The other option, that I know of, is creating a bag, but then I still have to get the data files out of that bag. For example, if originally I bagged items to move from a hard drive to the server, and now I want JUST the preservation files on the Archivematica directory.... 
Am I making any sense? Is there a command line out there?

Elsewhere I got 2 answers so I thought I'd post here as fyi.
1.
Official site of TeraCopy for Mac, a free utility designed to copy files faster and more secure. It can verify copied files to ensure they are identical. It skips bad files during copy, not terminating the entire transfer.
