HEALTH INSPECTION

Hello everyone, 

I have attached a guideline I need everyone to review and keep in mind for when the health inspections happens. 

You all know we were just inspected yesterday. We had a mock inspection today with a health inspector who came to check up on the work yesterday's health inspector did. In talking with her she informed me we have 7 days to get it together before we will be inspected again. So from here on out we have to be on HIGH alert. 

We ARE getting a health inspection and it will be VERY SOON. 

As soon as the inspector comes you need say let me go get my manager and say "poptart, poptart!" into the intercom. Do NOT go downstairs to get Naz or myself, they WILL follow you. We will come up and assist the health inspector. 

They will be asking you questions such as where is the CPR kit? It is under the cash register. Pull it out and show it to them. Our tax ID number is framed on the wall above the dirty dishes. our PH test strips our located downstairs on the wall of the 3-bay sink and also located next to the fire extinguisher. 

If you are on your lunch break, you should NOT be in the kitchen eating. BOH, This means you!

All staff drinks NEED TO have a lid. 

Scoop ice with ice scoop only. 

Wear gloves to grab pastries from the display. 

In the rare chance we get a batch of kolaches or anything with meat in the display, toss it!

BOH- Toss your bacon and anything you think might be in the danger zone!

Cave entrance should be locked with the light shut off. If they ask, which she did today, It's landlord access only. 

We have to be on it when it comes to cleaning. Nazario and myself will be hard asses about giving cleaning projects, this place has to look amazing, we need to leave no stove unturned. ha! that was clever!

When we ACE this inspection I'll take everyone out for poptarts! or ice cream.
