Hello, 


I just want to say how proud I am of you all for really banning together and making sure we got an A on our most recent inspection. I am taking you all out to Ice cream tomorrow (Saturday Aug 22nd) at 7pm. We're going to Ample Hills Creamery. The one at Pier 5 in Brooklyn Bridge park. It's actually walking distance to T&H. I mentioned we're meeting there at SEVEN, right? Inline image 1


Cell phones have really become an issue. I can not express how disappointed I am every time I look over and see someone finishing a text before they start on a customer's order. I don't care if you are texting Michelle or myself. We want you to help the customers before responding to us. And let's be honest, most of the time we are just texting some fly hunny. I know we all love how laid back things can be here at T&H but we need to make sure to not get too laid back. This is just a warning and hopefully we can all limit our cell phone use before cell phones get banned from upstairs. 


Closing down is also an issue we need to discuss. We get so excited when 5pm hits and we can just taste freedom its so close. However, we have all been getting way too excited to close that we have not been thorough in closing as well as we've been closing a bit too early. Chairs can not go up until 5PM sharp. This place should get a good cleaning, sweeping and mopping. If the mop smells like a dirty shoe, change the mop head. Mop heads are located in the cave and take less than 5 mins to change. The mop will no longer be kept in the dirty water bucket overnight. Let's keep it out so it can have a chance to dry out. Also, the "dirty water bucket" should never actually have dirty water in it, just clean sani water in it. 


Orders, who should put them away? That's a great question! When the paper/coffee/alcohol/water order comes in the responsibility falls on the closer. and YES, you have to put it away the same day we receive it.  We are not allowed to have things on the floor, they have to be 6 inches off the ground. If things were to be left and we get a health inspection in the morning we're screwed. 


Speaking of health inspections....

This health inspector said his boss will be coming in to check his work and make sure we have worked on the things we said we would work on. He said this will be happening within a week or two. So yes, there will be another health inspection happening soon. This inspection will not be graded but let's make sure to stay on high alert. Ugh, they really are targeting us.
