Sim tu pode fazer o processo que o Rodrigo falou, mas o comando
lvextend -l+100GB /dev/mapper/vg_server-lv_root nao vai funcionar, inves de -l substitua por -L.
Mas mesmo assim eu usaria o seguinte comando:
lvextend -r -l +100%FREE
/dev/vg-server/lv_root
Com esse comando automaticamente pega os 100% de free space no vg e faz o resize, nao sendo necessario executar o comando
resize2fs.
Utilize os comandos pvs, vgs, lvs e fdisk -l para ver detalhes do physical volume, volume group, logical volume e discos e particoes, respectivamente. Faca isso antes e apos o processo, pra ter certeza que esta tudo certo.

[root@vmmodel ~]# lvextend -r -l +100%FREE /dev/vg_vmmodel/lv_root

Logical volume lv_root successfully resized
resize2fs 1.41.12 (17-May-2010)
Filesystem at /dev/mapper/vg_vmmodel-lv_root is mounted on /; on-line resizing required
old desc_blocks = 1, new_desc_blocks = 1
Performing an on-line resize of /dev/mapper/vg_vmmodel-lv_root to 4070400 (4k) blocks.
The filesystem on /dev/mapper/vg_vmmodel-lv_root is now 4070400 blocks long.
[root@vmmodel ~]# vgs
VG #PV #LV #SN Attr VSize VFree
vg_vmmodel 4 2 0 wz--n- 17.50g 0
[root@vmmodel ~]# lvs
LV VG Attr LSize Pool Origin Data% Move Log Cpy%Sync Convert
lv_root vg_vmmodel -wi-ao--- 15.53g
lv_swap vg_vmmodel -wi-ao--- 1.97g

Como tu pode ver as diferencas, eh isso o que acontece. Simples e sem complicacoes.
