how do I create a project?

I can pull the arrow tab down which reveals the home icon but I have no idea how to start putting my tasks and profiles into projects?

Are projects a new feature?  I just purchased Tasker yesterday, and I've been using the trial for a few days, but I have not seen anything regarding "Projects".  I have no "arrow tab" or "home icon" as suggested above.
 
I believe you first need to turn off "beginner mode" - menu/preferences/UI - uncheck "beginner Mode". Then you should be able to see the arrow. It's very, very faint and small on my GS3. Look for it right under the "Profiles/Tasks/Scenes/Variables" boxes at the top right in the middle. It seems to work best for me if I put my finger right on the line between Tasks and Scenes and then slowly slide it down toward the first profile. The triangle should light up. Once it does, you should be able to just let go and the projects tab should show at the top.

Hey, that spoils all the fun if you're going to just TELL people where it is. I think they should just fiddle around long enough until they discover it by accident. :)

Drag them from their right side to the appropriate project tab.
