Fairytaleeggplant is one of my favorite eggplant varieties. It eats just like eggplant, but is much smaller in size. Unlike Japanese eggplant (which are also smaller than Italian eggplant) fairytale eggplant tend to be firmer and a bit meatier in texture. They show up during the early summer months (farmers rejoice!) and are very fun for throwing on the grill or sauting in a simple recipe like this. I love fairytale eggplant because they cook quickly and hold together. If you are new to liking/eating eggplant, fairytale eggplant are a great place to start.

To quickly bring the salad together, just thinly slice the cucumber, serrano pepper and scallion greens and add them to a bowl. Season with the rice vinegar and a pinch of salt. Mix and set in the fridge.


It all starts with pressing your tofu. First, drain and lightly press the moisture out of the tofu with a paper towel. Slice the tofu into 1-inch square cubes. Add the cubes to a towel-lined baking sheet. Cover with another layer of paper towels (or a lint-free dish towel) and add another baking sheet on top. Add a book on top and set this aside to press.




While the tofu is being pressed, halve the fairytale eggplants and set them aside.

Whisk together the sugar, sambal oelek, rice vinegar, soy sauce, and miso paste. Set to the side.



Next, place a large cast iron skillet over medium heat. Add a drizzle of olive oil to coat the surface. When the olive oil is just below smoking, a little whispy, add the tofu.




Add another drizzle of olive oil to the pan if needed, then add the fairytale eggplant. Cook undisturbed for 3-4 minutes, until browning on one side. Then stir the eggplant to cook all sides, another 2-3 minutes.

Sew the body and the head together. Sew the back legs on. I sewed them up to the side a bit, and I sewed them so that they hang to the side, not from the bottom, so that they would sit the way I wanted them to.


The train departs Lisbon from the Rossio train station, located in central Lisbon. Sintra is located roughly 40 minutes from Lisbon by train. I highly suggest leaving as early as possible from Lisbon since you will need the entire day if you want to see all the castles.


Our first stop was Palacio da Pena. The moment we laid our eyes on the castle we were mesmerized by the beautiful bright colors and fairytale castle. The palace is a UNESCO World Heritage Site and one of the Seven Wonders of Portugal. We truly felt like princesses in this castle and explored the entire castle. It is free to roam around the castle but there is a small fee to go inside to see how people used to live.


From Pena Palace we walked to the Castle of the Moors, also called Moorish Castle. It is roughly a 10-minute walk down the hill. Quite easy to get to and entrance fee is around $10. It is a hilltop medieval castle and has stunning views!


Our last stop for the day was Quinta da Regaleira. It is a 20th century estate located near the city center of Sintra. Roughly a 15-minute walk. This gothic like property has a beautiful park, fountains, garden and an initiation well you must visit!


If you have time, make sure to visit Cabo da Roca. It is the westernmost point of Europe with beautiful ocean views. The hop on hop off bus has a stop here. From here you are able to go visit a small town called Cascais, 25 minutes south of Cabo da Roca. You will need to hire a taxi to get here since the bus does not stop in Cascais.


This was seriously one of the best days of my Gap Year, fun filled and tons to explore. The Pena Palace is one of a kind and a must see for anyone visiting Portugal. LOVELY blog Christine, and per usual, amazing photos ? Love it.




Fog regularly spills over the forest like a blanket, making it the perfect setting for stories and myths. The Brothers Grimm's stories were published in 1812 and are a lot more dark than the fairytales we know today.


We drove from Heidelberg through streets lightly covered in snow on our way up to hike the forest. As we edged closer we could see the landscape change: it was full on winter wonderland mode. Towering high trees leaned over the ground with the weight of the snow, as if to whisper a secret.


We pulled on our hiking boots, gaiters, and grabbed our poles to head into the thick trees and dense snow. There was a peaceful silence broken only by the heavy breathing of our dogs as they zoomed around the sparkling white landscape.


We often visited the Black Forest, for a spring time hike finishing with cake outside in the garden, bathing in the spas in the fall, drinking at wineries in the summer, or admiring a snow globe come to life in winter.


The Black Forest is a mountain range in Baden-Wrttemberg in southwestern Germany. It stretches about 100 miles (160 kilometers) with 60% of the area covered in forests and the rest are adorable villages that look just like gingerbread houses. Nearby towns like Baden-Baden and Freiburg are on the western edge and the perfect place to grab a bite to eat or stay over night.


I suggest taking a car to head to the forest. However, you can take a train to Baden-Baen, Freiburg, or Offenburg. But if you want to go hiking or see some of the smaller towns, a car is ideal. The scenic drives are worth it alone.


Outdoor activities are plentiful here. You can go hiking, skiing, and sledding. I suggest taking a tour of some of the most idyllic villages, heading to the spa in Baden-Baden, and having your fill of some of the delicacies of the region.


Organic fairytale tea is a delicious infusion can be enjoyed by fairies of all ages. Delightful and inspiring; this blend is full of flowers and fairy magic, with a little hint of mint. This refreshing complement to story time can be sipped both hot and iced.


Ingredients

Organic calendula flowers, organic red clover herb, organic spearmint leaf, organic lavender flowers, organic lemon balm, organic catnip, organic oatstraw, organic lemon peel, organic skullcap, organic chamomile flowers, and organic thyme.




Brew Instructions

Fill 1 tablespoon of tea in a cloth tea bag or mesh basket and place in your favorite mug. Pour 8 ounces of boiling water over the tea and allow to steep for 3-5 minutes or until desired strength is reached.


Precautions

Persons with allergies to members of the Asteraceae family should exercise caution with calendula and chamomile, as allergic cross-reactivity to Asteraceae plants is common. Not for use in therapeutic doses except under the supervision of a qualified healthcare practitioner.


Visitors can create their own fairytale adventures as they explore the world of the Brothers Grimm on the German Fairytale Route, which covers 600 magical kilometres from their birthplace in Hanau to Bremen, the home of the famous four-legged town musicians.


The German Fairytale Route follows in the footsteps of the famous Brothers Grimm, taking visitors on a magically poetic journey in seven-league boots, on a bike or in a car. The route boasts art and history in spades, leading to enchanting towns full of half-timbered buildings, fairytale palaces, castles, grottos and museums. And the festivities never seem to stop along the way, with open-air plays, puppet theatre days, fairytale weeks, barn festivals, fairytale meals and Medieval gatherings. In some villages, visitors even have the chance to meet their favourite fairytale characters.


Reality feels so far removed on the German Fairytale Route between the River Main and the ocean. There is so much art and culture to explore along the way besides eight nature parks, stunning low mountain ranges and river landscapes. Visitors are invited to dive into the flower-filled countryside, stride through deep forests, experience the buzz in vibrant cities and simply enjoy the charming hospitality.
