ArcMap Labelling Question

Any ArcMap labeling experts out there?  I am trying to label multiple projects in a table format on a large map sheet (E size, 36" x 48").  What is the best way to approach this?  Should I try and create a multi-line text file and insert the text file into the Map or should I use a label expression, or some other method?  Any help is greatly appreciated as this would serve to automate our labeling routines which are labor-intensive.

 I am no expert, but I like a good challenge - there are several ways to label features in ArcMap, if you are not familiar with "Define classes of features and label each class differently" in layer properties - take a look. Set up your symbology first, go to Labels in layer properties and pick the define classes differently in the Method drop down - pick "Get Symbol Classes". The drop down for Class now has each symbol listed and you can write expressions, queries, scale range, and placement properties for each individual symbol. You can also tell it to write a label or not per each - it takes a while depending on how many symbols you have but - it does work pretty effectively.

Thanks Stephan.  That does sound interesting and something I would like to delve into.  For a quick low-tech solution, I just created an Excel file containing the labels and copy/pasted graphics to the sheet view in ArcMap.  Of course, any changes will require me to edit the Excel file and recopy/repaste to ArcMap.  Low tech to be sure but it works!  Having said that, I would definitely want to explore the ArcMap labeling option you mentioned below and see how easy it is to use feature attributes and place them in a table format in a specific location on the ArcMap sheet.
