Quite often a witness statement may be dictated, rather than written
by the eye witness. Or it may be a written response to a series of
questions. The transcript to a court case is not taken by the
witness, or the accused, or the prosecutor, but by a third party.
Would that therefore make an account on a court case written by the
accused at a later date, a fraud?

Look up the term 3rd party, or hearsay evidence.
Try bringing documents into court that may or may not have been
written by a particular person about whom nearly nothing is known for
certain including his name.
Such a document has to have been dictated to someone known to the court or
you're not going to get anywhere.
Try taking a document to the court where your argument for its validity is
"I just happen to believe it" and see how serious the court takes you...
