The last turkey I cooked was frozen solid
when I put it in the oven, 22 lbs, and
when finished after almost 9 hours was
the best turkey I've ever cooked.
I'm sold that's the best way to cook a
turkey.
I found a website that explained why.
In a defrosted turkey the white meat
gets to temperature first, and the
dark meat second, meaning the white
meat is overcooked by the time the
entire turkey is at temperature.
But in a frozen turkey that's reversed
the outer dark meat gets to temperature
first, the white meat last, so when
fully cooked the white meat isn't
overcooked and dry as a bone.
And for the lazy cooks out there
like myself, it's far easier to
cook a frozen turkey. Just give
it a quick rinse, tent it and
toss it in.
Also in a defrosted one, the giblets are
usually still half frozen inside and a
bear to remove. I hate that! But not
after 3 hours of cooking, they come
right out~
