Takethe flavours of a classic sandwich and transform them into this hearty BLT potato salad recipe. Crispy bacon, juicy tomatoes and fresh lettuce combine with caramelised red onions and a punchy mustard dressing to update this traditional barbecue side into a simple lunch idea.

I am not the biggest fan of mayonnaise based potato salads, but ones with more of a pesto style of dressing are another matter. This potato salad with tahini herb dressing is fresh tasting and flavourful and I would quite happily just eat a bowlful of it on it's own for dinner (or even just the dressing by the spoonful!).


The tahini herb dressing is incredibly good, I would happily slather it on pretty much anything. It isn't just good on potatoes, try it with pasta, on salads, in wraps (with falafel!), on tacos, or just as a dip for vegetable crudites or crusty bread.


The tahini gives it a lovely creamy texture, without the need to add any cream (or any dairy products at all for that matter, which makes it vegan), the herbs add a wonderful fresh flavour, and lemon gives it a bit of zing.


For the potato salad I used Tesco Jersey Royal new potatoes, they have a delicious earthy, nutty flavour and are distinctive by their kidney shape, waxy texture and delicate skins. They can only be grown on the island of Jersey and they are the only potato that carries the EU Protected Designation of Origin mark of authenticity, like Cornish clotted cream, champagne or Stilton cheese!


Jersey Royals are still produced and harvested using many traditional practices such as planting the seed potatoes by hand, fertilising the potatoes using seaweed harvested from Jersey beaches and harvesting from the islands steep slopes using winch and cables.


Their arrival is one of the traditional foodie symbols that Spring has arrived; this year however, they have been delayed by severe cold weather conditions which affected the UK (the 'beast from the east'). They are finally available in Tesco however, but be quick! They are only available for a limited period each year and you will only be able to get them until July depending on stocks.


This potato salad with tahini herb dressing is the perfect side dish for Spring; it goes great with salmon or falafel, or is perfect as part as a buffet or barbecue spread. Both the potatoes and dressing can be prepared in advance but it is best not to mix the two together until shortly before serving and I think that it is best served warm rather than cold or hot.

Now Spring is in full swing it is time to shake up our meal planning and add some tasty Summer recipes to our go-to food list. Yeah, it is time to put the slow cooker away for a few months and start eating more creative salads.


Gently scrub the potatoes and prick them with a fork. Pop them into a food bag or container and add 3 tbsp of olive oil, sea salt and ground pepper. Give the bag a shake and pop them into a suitable roasting tray.


Tesco has just relaunched Jersey Royal New Potatoes in early May in a pre-pack and loose format. This product will be available until July depending on the amount of crop available. Jersey Royal new potatoes are ideal for boiling or steaming but are equally versatile for roasting too. Use them as part of a meal as a premium side dish or as the main centrepiece of a recipe.


That looks lovely and I love new potatoes so I will have to give that recipe a go. I like the addition of the hummus with the warm salad I would never of thought of pairing that with the potatoes and bacon.


Add seasoning to taste to the bowl then stir together your dressing to combine. Add the cooled potatoes and mix gently so that they are fully coated in the dressing but be careful not to break them up too much before serving.


To turn potato salad into a more substantial or main meal, try adding some cooked meat to the finished dish. Salty, smoky bacon or cooked pancetta cubes work well in both hot or cold versions, just grill or fry until crisp then chop into chunks and stir through the salad or crumble over the top for a crisp bacon topping. For a no-cook alternative, shred ready-cooked ham or chicken into the salad.


Oily fish such as salmon and mackerel are a great choice for adding protein and good fats to your salad. Simply flake the fish into chunks to stir through the potatoes, ensuring they get an even coating with the dressing.


Although a British classic, potato salad can easily be adapted to incorporate other flavours and cuisines. Try this Indian-inspired recipe, which adds fragrant spices to a crunchy salad of potatoes, cucumber, carrot and poppadoms, or go for a spicy Spanish twist with a hot potato salad with chorizo and paprika.


This chicken pasta salad is a great way of using up leftover chicken, and with the delicious flavors and textures of all the other ingredients, you're sure to have a wonderful salad for dinner, to take to work, or for a party or potluck!

This salad is a good dish to take to a potluck or party. It just needs to be kept chilled and simply serve in a bowl when you're ready. You can make it up the day before, so it makes life even easier!


1. Boil the pasta, then cool under running water and drain.

2. Make the dressing by mixing the mayonnaise, mustard and honey in a large bowl and loosen with a little water to make a dressing the consistency of thick yogurt.

3. In a serving bowl, add all the ingredients and combine.

Season with salt and pepper to your liking.

Serve chilled.
