How to change settings without config.py in taiga 6 docker

Hello, I'm trying to set notification delay to 0 but every time I try to use the config.py nothing works anymore.
There is a way to change just some params without overriding everythings?
using config.py from  taiga-back/config.py.prod.example at master · taigaio/taiga-back (github.com)

doesn't work, any suggestion?
