Does anyone know how to make is so all emails to and from a specific
user are automatically tagged?

For example lets say I create a tag called "Customer A". And I want
all messages sent to him and from him to be tagged with "Customer A".
Can that be done?

Like a sucker I have been doing it manually!

Indeed a great idea. We have been looking into that already but there
are several limits in the Mail.app that makes it difficult/impossible
to achieve that task. We hope to come up with a sweet solution in a
future version.

I use MailTags for that. It picks-up OpenMeta tags so the two applications work like a charm together.

You might be able to do this with MailTags and Mail ActOn.
