I have found this write up which is quite good, you will see in the write up the guy removes the motors before winding in the pistons you don't have to remove the motors though if you have backed the motors of with the VCDS here is the link -garage/351133-2007-passat-rear-brakes-diy-vagcom-pics.html#/forumsite/21090/topics/351133?page=1

Yeah done mine. Very easy.
Start the procedure in vcds then the pistons just push back like the front ones.
Once both sides are done pump the pedal up and finish the procedure on vcds.

I was a little worried when I done mine but this was the easiest part.

I've changed the pads on my car using the above process and all good. I think the workshop manual states that the diagnostic tool (VCDS in this case) should remain connected throughout the process with the battery on charge.

Once you've wound the piston back in if you can't fit the pads then you need to use a G clap to similar tool to apply force to push them back in a little more. Don't do what I did one side and recycle VCDS as this makes the piston come fully out and you'll require a new calliper as there's a spring and a load of ball bearings in a pile on the floor!.

When I done mine, I used vcds put the motors back and disconnected vcds.
Pushed the piston back manually then found the pads supplied were wrong
My car sat 24 hours waiting on the correct pads with the calliper tied up.
As long as the brakes not pressed the motors stay back until vcds is used.

Yes similar here entered change lining mode.....

Ignition off pushed back protruding piston changed pads both sides then plugged back in with VCDS and ended lining change mode.

All good.
