BLE connectivity between Shearwater dive computers and Subsurface can be tricky.
Anything changes (e.g,. different device you connect to, different firmware, etc), and it can take a while to get it working again.
There are literally dozens of threads here on this forum about this. Most people can get it back to working order with one or more cycles of "forget device, pair device, try again".
A couple of people have not been able to get it back to work.
I have two different Shearwater dive computers here with the latest firmware and they both work fine with 5.0.3 or Subsurface-mobile 3.3.0 (which is built from the same source version).
Not exactly a super helpful response, but it's the best I've got at this point.
