Many of you are familiar with my Paleo Chicken Tenders, which use unsweetened coconut as the breading, and are accompanied by a honey mustard dipping sauce. I created those for Asher when he 2 years old and he used to devour them. Then, all of a sudden, he refused to eat them. One day he loved them, the next, he tossed them on the floor! Kids can change their tastes so quickly as they're growing and exploring new foods, and he typically would circle back around to liking something again, but with these he didn't!

With everything happening in the past year, I defaulted to buying frozen gluten-free nuggets from the store for him, which became really pricy! I always wanted to create a recipe that he would like again and I could keep stocked in my freezer. I finally had time to do some testing over the last month and we have a winner! I went with a slightly unconventional flour in my kitchen in attempt to keep things nut and coconut free for all of you.

The use of chickpea (or garbanzo bean) flour makes these nuggets fall outside of the Paleo guidelines, but they are completely grain-free, dairy-free, and nut-free! Chickpea flour is also relatively inexpensive and is also loaded with protein and folate, and is lower in calories and carbohydrates than standard flours. You know those beer battered chicken or fish sticks you can get at a good pub? The beer helps make the batter light and airy, while providing a good crunch, so I recreated that effect in a gluten-free and kid friendly way by using sparkling water! I chose to use ground chicken because Asher prefers that, but you can just as easily cut up small pieces of chicken and dunk them in the batter as well.

This batter will also work great for fish, or even for tempura veggies! The nuggets freeze wonderfully, so I make a big batch and have them for weeks to serve when a babysitter is over or we're needing a quick dinner. This recipe makes about 20 nuggets, so if you're feeding multiple kids you may want to double it so they last you longer. The process of making them is simple, but slightly time consuming, so I prefer to make them once a month or so.

Cool the nuggets completely then freeze them in a single layer on a baking sheet. Transfer them to an airtight container and store for up to 3 months. To reheat, place the nuggets on a baking sheet and cook at 400F for or 12 minutes or 8 minutes on convection.

Winner winner chicken (nugget) dinner! Hubby and 5 year old were fighting over the last one! I think the only thing I will change next time would be to add some more spices and definitely double the recipe! The freezing/reheating instructions worked great too!

Hi there. I typically thaw them overnight in the fridge. You can reheat in either place. In the oven, I cover with tin foil until heated through. The microwave will depend on its power and how many you are reheating. I typically put them on a plate, cover with a paper towel and heat for about a minute.


I made these with our 4 yr old granddaughter recently. Grandpa cut up the chicken. I had the bowls set up for dipping and breading. Tried explaining the wet hand, dry hand method to granddaughter, but she had other ideas and just used both her hands to dip and bread. It was kind of a mess, but decided to just go with it. I made these tonight for the first time for a very picky crowd. It was a smashing success! I fried the chicken and then I had to finish it in the oven, but it was still extremely moist and the best part is that my very picky daughter ate them, my not picky son ate them and my semi picky husband requested that I make them again!

Please, more recipes without egg! My son is allergic and I would like to use some of these recipes but lots of them gave egg. It is a far more common allergy than what you would expect. E.g nuggets, banana muffins, vegetable muffins etc.

Have you tried using applesauce as an egg replacement in baked goods, like muffins, etc? My daughter has a good friend who is allergic to eggs too, so I have tried to accommodate it. We really like using the applesauce because everything tastes very moist. Had great success with cupcakes and muffins.

With wet hands, take about 2 tablespoons of chicken and shape it into a small disk. Coat first in almond flour, then dip in the cornstarch slurry, then coat again in almond flour and transfer to the wire rack.

In a non-stick skillet, heat 2 tablespoons olive oil. When hot, add half your chicken nuggets to the pan. Cook for about 1 minute, until the bottoms begin to brown. Flip and cook for another minute to brown the other side. Transfer the chicken nuggets back to the wire rack.
