What is the Delegator column for in my Action List?

The Delegator column will include info if someone else has given authority for you (i.e. you are the Primary or Secondary Delegates) to take action on their action requests, their (the delegrator) name will appear in this column.
So in this example, Christine is the Secondary Delegate for Cindy, so in Christine's Action List, Cindy's name will appear in the Delegator field:
