Oh my! This is great! I cut the chicken in small strips, soak it for at least 24 hours, broil it and use it for Greek chicken salad! And, I freeze it for single serving salads for a quick lunch whenever I get the craving! Thanks Jessica!


I made this tonight for dinner and it was really really yummy. I do think it needs more oregano and salt. I had very large bone in skin on chicken thighs which I baked in the oven at 400 for 40 minutes. Then I let them rest for 10 minutes. I serve them with a Greek salad with red wine Greek vinaigrette dressing. A very simple easy meal. The lemon and lemon zest is the perfect amount in my opinion a nice tang without being overpowering.

Family all agreed this recipe was a keeper and have asked for the recipe. Very easy and flavourful, marinated for barely 30 mins ( though slashed tops of chicken breasts) and threw on the grill. The tip to cook to 160 deg and then tent, resulted in very moist, tender chicken.

Yum! Seeing the oranges makes me think of a salad I had for lunch today. A group of us from work went to a cafe and I ordered the chicken and orange salad with pine nuts and feta. It was delicious and I am planning on trying to replicate it. I will post it on my blog when I do.

My friend and I studied it closely and decided that the feta had been crumbled finely and then combined with orange juice and possibly a little oil as all of the greens were nicely coated and the dressing was right through the salad rather than just drizzled over the top. The chicken was poached and slices arranged on top with some orange segments.

Dressing is one of the crucial ingredients of the salad, especially when it comes to Greek salad. Glad that the salad we ate yesterday is so good. We had a lunch at El Greco. My mom and I went there taste the salad, wraps and rotisserie chicken. Were even surprised to know that we got some discounts thru their dine-in offers.

There are many options for the principal ingredient, including chicken, ham, oysters, turkey, wild turkey, squirrel, rabbit, beef, veal, crabs, soft-shell crabs, shrimp, greens, and cabbage. In addition, some types of gumbo, most with okra, others with filé. I add a little of both because I like the taste of each. The ingredients are easy to gather, and other than the slow process of making the roux, the recipe is pretty simple.

A mix of Mexican-inspired ingredients such as black beans, corn, and avocado, along with hearty whole wheat pasta and a light and creamy Greek yogurt paprika dressing, this Southwestern pasta salad boasts simple prep and complex flavor, with wide crowd appeal.

I always look for ingredients that mesh and this one does just that! I used fresh sweet corn instead of canned. Love the hint of smoked paprika in the dressing.

Chicken salad is really easy to make and a great way to use up leftover chicken breast from a whole roasted chicken. You can also poach the chicken in chicken broth (see below) or use my air fryer chicken breast recipe to make this salad.

To make the salad, remove the chicken breast from the roasted chicken and chop it fine with the veggies, then combine with mayonnaise, celery, onions, Dijon mustard, a little chicken broth if needed and season with salt and pepper.

Since I use less mayo than most traditional Chicken Salad recipes to keep it light, I like to add a little chicken broth to keep it moist without needing more mayo or yogurt. This is a great dairy-free option.

I've been making the original recipe from Recipezaar (now food.com) for a couple of years. I use Rotisserie chicken and whole wheat thin spaghetti. This stuff is like crack, we never get tired of it! Love that you featured it here!

One major aspect of this salad is the thin chop of the romaine lettuce. It defines the salad, so please do not rough chop it if you want to keep it authentic and get the dressing in everywhere. My mom and yiayia also taught me to massage the chopped lettuce with my hands. It softens the fibers and makes the salad easier to chew and digest. This process is actually quite therapeutic and enjoyable.

This is such a simple salad but has tons of flavor! The second time I made it I added chicken, black olives, and cucumbers. That was very tasty also. Thanks for sharing this recipe, it will wake up my lunches at work.

I found this recipe last year and got addicted to it, and I waited all winter for fresh dill to come back in season just so I could have this again! Soo tasty. I add a bit of sugar and cracked pepper to the dressing and it tastes so amazing

So good! My family loved this salad. I used 4 oz olive oil instead of sour cream in the dressing and roasted thicker slices of onion (along with strips of red and yellow pepper). Otherwise made just as written. Thanks for this recipe. Will be making it again.
