Good Morning neighbors,

This Sunday Valerie and I will be doing our first canning of fresh tuna.  I'm wondering if any of you have experience with putting spices or herbs or such in the jars as you can, and would be willing to make some suggestions. 

Also, I'd like any advice you have for us.  (We are veteran canners, but are new to pressure canning and to tuna.)

I just canned some tuna for the first time ever last week.

Some of the spice combinations I used are:

Thyme
Hot curry mix
Roasted Jalapino with cilantro and tomatillo
Hot roasted plum sauce
capers and sundried tomatoes
minced garlic

I put them in the bottom of the jars so I can tell which is which. I
just tried the thymed fish a few days ago. There was a lot of thyme
in it, but the flavor was subtle.
