Anyone tried to cook octopus sous vide?
I googled for a while without finding much information about it.
The question comes because i'm trying to get less weight loss during
the cooking and improve in tenderness.
But i don't know if the octopus is suitable or if you get any
advantages from sous vide.
Any kind of information is appreciated

Yes it works, I have tried twice and
its nice n juicy.
I do not have the recipe here as I am
off today, I can mail it in the next days.
It works great for the carpaccio as
you can freeze it directly...
