Probably easiest to use TasmoCompiler but using the sensors.bin may have the sensor already in it check Firmware Builds - Tasmota

I have looked through the documentation but the problem is there is too much.  Can someone point me to a good "how to" document about how to compile in the Arduino IDE?

Yes, I know platformIO is preferred, but to get it installed and learn my way around it is overwhelming at this point.  All I need to do is add some sensors to a build.

I used to feel the same way about the move to platformIO. I was used to using arduino and didn't want to change.
I wasted countless hours fighting it. Never got a functional binary out of it
There doesn't seem to be a way out of having to learn to use a new setup.
TasmoCompiler may have a lower learning curve? First I've heard of it, so I don't have experience using it.

However, having used platformIO in visual studio code, it is a much nicer IDE. I've started using it for Arduino Mini projects too.

My antivirus used to sandbox the updates and build tools, which causes everything to fail. I haven't had a problem since configuring the antivirus to ignore them.
Other than that, it is more automatic and there are generally you-tube videos to answer questions about what a thing does or how to do XYZ.

I must have used this video at some point during my journey? The link appears as one I have visited before.
At 1hr 30+ minutes, he's long-winded, but he walks through the entire process.
If I remember right, there are some holes in the github instuctions and seeing the process performed in real-time filled those holes.

It is just five steps (next, next, next, next, compile). Have a look at screenshots provided on the project github page: https://github.com/benzino77/tasmocompiler.
You can start it locally (with docker or directly from sources) or use gitpod and build your binary remotely.

That is the first I have heard about TasmoCompiler so I tried it and it is GREAT!  Exactly what I needed and very simple to use.  Kodos to the developers!  I used the Docker method and It worked like a charm.
I did not have to install PlatformIO although I will have to do that eventually, but later....
