If you can access it via serial you can use something like ESPlorer to read the ipaddress and the log as it boots (or use backlog ipaddress1 x.x.x.x; restart 1 to set a static IP). Any terminal programme will also read it.
Having said that I normally just log into my router to find new devices in the DHCP list.
