I was looking to see if I could run a Sonoff SV with a battery for months at a time

Uhm... apparently not really a possibility.

Any body know of a company that offers anything like Sonoff/Tasmota using like a

Silicon Labs Mighty Gecko?
Qualcomm QCA4020?
NXP KW21Z?

These use the Thread protocol stack which seems to promote itself as very low power over IPv6

Me?
Software hacking does not does not bother me... but...
I'm allergic to soldering irons. :-P
I'd rather buy an already built device.

Actually your solution may be a USB rechargeable power bank. It is possible to put the ESP8266 into sleep mode which will reduce consumption. Most power is used in transmission so making the logging interval as high as possible may help.
eBay has a 100Ah powerbank for under £10 - I'd take capacity with a pinch of salt but, if the SV is drawing less than 200mA you might get a month between charges.

perhaps look at using a wemos D1 board and a tp4056 lipo battery board.  i use this combo with my version of the Ispindel project
https://github.com/universam1/iSpindel  (very comprehensive documentation and a long development period with user driven upgrades..)
my ispindel runs for over 3 weeks logging to ubidots on a single 18650 2400mah lipo..

for max efficiency removal of the wemos d1 on board leds will reduce power use..  as per the ispindel documentation

However the ispindel project which can run for 3 weeks+ on a single battery charge runs firmware that goes to deep sleep for 15 minutes wakes up logs and goes back to deep sleep.
Tasmota sleep feature may not be sufficient to power this long?? https://github.com/arendst/Sonoff-Tasmota/wiki/Energy-Saving
