[Steve] The owner normally is the person that is supervising the work
and the assignee is normally the person doing the work at any given
time. It does, by default, make you the owner of the item when you
add a new item. If you don't like that behavior, click Setup / System
Configuration / Screen Layouts / Defects (or what ever screen you wish
to control) / click the Defaults tab. Notice that the Owner is
defaulting to the person logged in. You can remove that here. To
learn more about screen layouts, watch this quick movie:

[Steve] Regarding hiding fields, yes, you can do that as well. You
can do that regardless of what the status is by using the Screen
Layouts feature discussed above. But many times you wish to hide
fields based on being in a specific status. You can do that using our
configurable workflow. To see how to do that, watch this quick movie:

[Steve] There is no way to do that currently without a special java
script extender, which is pretty easy. The extender is simply a
special java script include for your account that can implement this
type of logic (and do any other custom logic you desire) that is
placed on the add/edit screen. If you are interested in that, it
takes a little professional services work, so just let us know and we
can have our professional services team contact you.
