Why does the API not return all nodes, ie it shows less friends and
followers than my twitter profile actually has.

SGAPI data depends on our ability to effectively crawl the web and Site's willingness to mark up relationships with XFN. Because we can't crawl all the web pages as soon as they are updated, some data is bound to be stale. Because Twitter does a less than stellar job at making their pages crawl-friendly, we are missing additional information from that domain in particular.
