Ordering records from archives in Poland

Hello!
I am interested in ordering records from a few different archives in Poland.
Mainly I am looking for records which don't appear anywhere online,meaning I
want to sent a request for just a surname and obtain all the records of that
town with that surname.

Also I am inerested in early records which are sometimes in the same collection
as non jewish records.

Can anyone explain how to go about this?
