None of these terms appear in any French-English dictionary I have
consulted. Is there a good reference that lists the occpuations and
duties of the time?

Paumier - the owner of a "jeu de paume" or someone who made
the equipment for the game. "Jeu de paume" can mean either
the game of the place it was played. It was one of the ancestors
of tennis where the players hit the ball with their hands ("paume"
means palm).
Serger - worker manufacturing serge (is there a difference between
serger and sergetier ; I don't know).

So far as I know, this is an old form of "tisseur" - someone who makes
cloth, weaver.
