What are most paintings of?

In my reasearch I read that Chinese put poems on their paintings. Is this
true? Do the poems relate to the picture?

I also read that they paint on xuan paper or silk. What do they use now?

What is xuan paper?

How do modern paintings differ from ancient ones?

Do you know of any sites where I could find more information?
