Migration to new laptop

Hi everyone,
I'm currently in Spain, the only difference is that the weather is better than the UK, all else is as bad. This is a preemptive question.......
I have just ordered a new MacBook Air but as I want a UK keyboard it is being shipped from Netherlands in about two weeks.
I currently have a Mid 2012 MacBook air running Catalina which I want to pass on to a family member after migrating to the new computer. I only want to migrate the Keychain info and a few applications and data I use and ignore all the other apps and rubbish which has built up over the years, hence I end up with a clean new laptop. I know Apple has migration aids for setting up new systems but was wondering if there is anything I need to get in terms of cables to connect the two machines or can it be done via wifi, bluetooth or some other magic? Also i'm hoping I can be selective with the things I migrate.
Any help would be appreciated.

The built in migration assistant will work over wifi (bluetooth would take months to migrate) but the best way is to back up your old Mac to an external USB drive using Time Machine, then plug the drive into the new laptop and migrate from that.

It’s easier to migrate everything then delete apps you don’t need, or during the migration process you can untick Applications and it won’t transfer them.
