Yeah it’s a bit weird. You need a separate eSIM from the same provider. My wife has one and I think pays 7-10 quid a month. At one point it was only EE and 02 who offered it. She can make calls on it when out and about but it seems to route them via her main (phone) number. Using *that* from an iPad or Mac requires the phone be online even if elsewhere. I’ll ask her if it works when phone is off.
One thing about the watch is that it picks up calls (even without cellular, like mine) and you end up answering on that, then it gets silly as the speaker is tiny. You might need to explain not to answer on the watch, just go to the phone and answer there.
But I’m confident the SOS will work away from the phone and she can make calls from it (best done with Siri).
