need appetizer help

and the main ingredient this month is potatoes---local watering hole has
some food related 'contest' most every month--last month was deviled
eggs(wife won) and this months is spuds
So far there are already two soup entries and think the wife is bringing
a deep fryer to make fresh chips--so far am thinking of hollowing a
small 'tater, filling with cheese/sausage mix and wrapping with long
thin strips of bacon---whatever I make has to be able to be transported
and eaten without too much loss of texture/flavor--any ideas/suggestions
welcome
