I’m trying to catch up with all of the new products in the BH product line. What would any of you recommend for a sauce that is more tart than the original? The flavor of the original is very good but is too sweet for “some of us” in this household.

Thanks, looking forward to hearing from you. BTW, my July 4 rib cook didn’t go as well as it should have. I have 2 full racks of over cooked spares left. Dangnabit!

You could try cutting the original with a bit of apple cider vinegar, or
if you want to keep a bit of the sweet notes, some mirin.

The Tennessee Red is a more vinegary sauce.

Sherm! I drew off the first jar of the mustard sauce! I have an autographed bottle. I was actually hoping the product line had a specifically tart sauce. I’m getting the hand of “this isn’t the BH thing”. I’ll have to manipulate some of the recipes for myself. Thanks for the input. Tennessee Red is my favorite of the current line up. I’m looking forward to trying some of the dressings add on flavors.

I mix original with Tenn Red. Thins it a little and adds some tang. Bill mixed them as his finishing sauce for pork at comps. I was blessed to help him out at 3 comps and learned so much!

Bill gave me a jar of mustard sauce from that first batch. Didn't think to get an autograph. When I did comps with him, he sent me home with the jars that didn't sell as payment for helping out. I was stocked up for years!

Jim sent me several bottles many years ago. I guess he felt sorry for me, up here in my igloo with no access. (grin) We had quite a few conversations over the years as we were also both veterans. I really miss him! At any rate, I was absolutely astounded to walk into my local hardware store, here in the “backwoods” of Nova Scotia, about 6 months ago and find a whole shelf of Blues Hog products, both sauces and charcoal! 

Sure is great to see their success. Bill would be so happy!
