Hope everyone had/has a great Memorial Day

No BBQ today

Chuck Burgers
Sams Cheese/Pepper hot dogs (look like a bratwurst)
Pototo Salad
Macaroni Salad
Baked Beans
cup cup cup peach Cobbler with Blue Bell Peach Ice Cream

cupa cupa cobbler dessert

1 cup self-rising flour

1 cup sugar

1 cup milk

1 stick 1/2 cup butter

2 cups fruit peaches, berries, or cherries work great

Directions: Preheat oven to 350. Place butter in a 9x9 baking dish and let it melt in the oven. 

Meanwhile, in a bowl, mix flour, sugar, and milk until combined (don’t overmix). 

Once the butter is melted, carefully pour the batter into the dish without stirring. 

Spoon the fruit evenly over the top—again, do not stir. Bake for 40–45 minutes, 

or until golden brown and bubbling.


I used a can of sliced peaches and poured about half of the juice out of the peaches and cutt them in half.


Made my wife smile so my day was good!

Had a rainout for parade and the cookout was moved indoors.  I did throw 10lbs of drum sticks on the umbrella covered WSM.  Drumsticks  were a hit.

Here is his sweet potato pie recipe. Not sure if this will help but I don't have one labeled squash pie.

Big Jim’s Sweet Potato Pie

 

INGREDIENTS:

  CRUST

   1 cup quick cooking oats
 1/4 cup whole wheat flour
1/4 cup ground pecans
 2 Tbsp. light brown sugar
1/4 tsp. salt
3 Tbsp. vegetable oil
1 Tbsp. water

FILLING

1/4 cup packed brown sugar
1/2 tsp. ground cinnamon
1/4 tsp. ground nutmeg
1/4 tsp. salt
1 egg, beaten
4 tsp. vanilla
1 cup cooked, mashed sweet potatoes
2/3 cup evaporated skim milk

PREPARATION:

Preheat oven to 425°. Combine oats, flour, pecans, sugar, and salt together
in small mixing bowl. Whisk together oil and water in measuring cup. Add oil
mixture to dry ingredients and mix well. If necessary, add a little more
water to hold mixture together.

Press into a 9-inch pie pan and bake for 8 to 10 minutes, or until lightly
browned. Reduce temperature to 350°. In a mixing bowl, combine sugar,
cinnamon, nutmeg, and salt together. Add eggs and vanilla and mix until
ingredients are well blended. Stir in mashed sweet potatoes and milk. Pour
filling into prepared pie pastry shells. Bake 45 minutes at 350° or until
knife inserted near the center comes out clean.

Smoked Squash Pie
Recipe By :Big Jim
Serving Size : 1 Preparation Time :0:00

Vegetables
Amount Measure Ingredient -- Preparation Method

4 ounces mushrooms -- drained, sliced
1 small onion, chopped
2 medium yellow squash, sliced
1 large bell pepper, chopped
4 tablespoons oleo
1 large tomato, sliced
2 deep dish pie shells
1 cup Miracle Whip or mayo
1 cup mozzarella cheese; grated
Optional Addition:
1 1/2 cups chopped smoked chicken or turkey
Sauté onions, squash and bell peppers. Mix mayo and cheese together. In unbaked pie shell, layer onion, squash and pepper mixture, (chicken or turkey if added), and then mushrooms and then tomato slices. Top with mayo and cheese mixture. Bake at 350F for 30 minutes or until crust is golden. Good cold if it last that long.

NOTES : I used fresh mushrooms (8 oz) and sautéed them along with the onion, squash and bell pepper and doubled the cheese to 2 cups, then 1/4'ed a tomato and arranged it on top before cooking. It sure looked good with the juices bubbling and the cheese and crust nice and browned when I took it out of the smoker. I cooked it closer to 1 hour than to 30 minutes. Big Jim
