Bread Pudding Recipe

Sorrry for the delay....

Bread Pudding
1 Gallon Cream
16 Egg Yolks
8 Cups Brown Sugar
4 teaspoon Nutmeg
4 teaspoon Cinnamon
6 oz Dark Rum (for the recipe and 8oz for the cook)
2 Bags of rolls, diced

Mix everything but the bread and pour it over the bread in a pan and cook till done (medium brown)


:D  Enjoy!  (It's really tasty)

Thanks Paul, got it saved in my catering file. Am I correct that it fits in a full sized hotel pan and serves 40  to 50 folks.

yes, you only need one layer or so of jumbled bread so the pudding is only 1"  or so thick.  So, the bottom of a hotel pan.

That is a great recipe, but I feel compelled to substitute day old glazed doughnuts for the bread   mike

Bill Nicholson's Krispy Kreme Bread Pudding with Butter Rum Sauce courtesy Paula Deen

Ingredients

2 dozen Krispy Kreme donuts

1 (14-ounce) can sweetened condensed milk (not evaporated)

2 (4.5-ounce) cans fruit cocktail (undrained)

2 eggs, beaten

1 (9-ounce) box raisins

1 pinch salt

1 or 2 teaspoons ground cinnamon

Butter Rum Sauce, recipe follows

 Preheat oven to 350 degrees F.  Cube donuts into a large bowl. Pour other ingredients on top of donuts and let soak for a few minutes. Mix all ingredients together until donuts have soaked up the liquid as much as possible. Bake for about 1 hour until center has jelled. Top with Butter Rum Sauce.

 

Butter Rum Sauce:

1 stick butter

1 pound box confectioners' sugar

Rum, to taste

Melt butter and slowly stir in confectioners' sugar. Add rum and heat until bubbly. Pour over each serving of Krispy Kreme Bread Pudding

When I was in Hardeeville, SC, about 1972-3. I was manager of the Tasty World at the Days Inn. One of my weekday cooks was and older Black Lady (well both of them were) made me bread pudding, she put fruit cocktail in it. Up until then the only bread pudding I had eaten was what my Mother made, hers didn't have fruit cocktail in it, just raisins
  I thought the fruit cocktail was a nice addition. I don't make it that way, BUTT didn't mind it.
  The recipe I used at The Store is the one in "Food For Fifty"
  Also used the banana bread one in there.
  BTW my weekend cooks were all Black High Schoolers, what a difference age makes<g> I inherited both crews. I kept both crews. They was good. Days Inn had not opened any Disney Inns at that time. The restaurant was a 120 seat affair and was busy, busy, busy. I also had a gift shop and 8 gas pumps.
  The Inn was 180 rooms and ran 100% occupancy, sometimes more.
