Bruce Those look great what did you cook them in . I have been cutting the
wings off mine because they have been burning because the turkey is so big .
I did a full bnls rib eye and that thing just barley fit on the top rack in
the WSM after a while it shrunk a little and it was sitting in there more
comfortably

My pit was designed and built by our own Big Jim. I really like the pit. Its
versatile and small enough for home use and large enough to feed a couple
hundred people. A lot of beef, pork, and poultry has passed through it. The
largest gig was 500 lbs of brisket I cooked over 3 days. I can easily get 3
cases of pork butts in there too. I've cooked chicken for 200 once. That was
a pain.

Glad I didn't see those yesterday. Would have made a long day longer. Working doubles on a holiday stinks. But it gives me christmas off and I got to track down a Marine deserter so I guess it was worth it. 
 
Tomorrow I'm going to throw a couple turkeys on the Black Dog with some maple in honor of the holiday. The E&J off set is going to do up 4 butts and a couple briskets with oak. Got invited to the Bills Vs. Dolphins on Sunday figured would be my contribution along with some chicken wing dip.

Bruce The versatility of that pit is fantastic . Those turkeys looked
picture perfect
I always have cooked ribeyes using Gary W's or Howard's Ackerman's recipe I
don't know who's it was originally and this was the 1st time that I did a
whole one in the WSM I had a 125 reading on the therma pen in the center
and it was a probably a perfect rare had I sliced it 20 min from then but I
wrapped it and put it in a cooler for a couple hrs and it was still almost
med rare in the middle . I think if I know I'm going to wrap a whole roast
again Id pull it at 120 or 122 trying to have a nice rare center

Just to see if it could be done I smoked salmon in the vertical, pork butts
in the horizontal, and grilled some steaks on the firebox all at the same
time. 3 distinct different temperature requirements at the same time and it
worked.

Here's a couple of pictures of the most challenging cook I've done with it.
This was in mid-Wisconsin for a Gary W's next door neighbors surprise BD
party for his wife at a home they were building. The house had electricity
but no running water. All water used to cook and clean was bottled. It
rained throughout the day was definitely cool and 25 miles from nowhere.
Gary and I had a great time cooking ribs, fried turkey, sausage, sauerkraut,
bologna, and a few other items. Buzz was there also.

The "Mudbugs" photo is some of the kids who had been riding dirt bikes
throughout the day. They had just spent the last hour "body sliding" down
the muddy hills. The kid's families had intended to spend the night in their
motor home, but went and got a hotel room instead.
