OT:spicy pickled quail eggs

I got up round 1:30 a couple of mornings this week and peeled quail eggs.
Got them pickled and canned yesterday.
I got almost 12 pints. @ 24 eggs (average) to pint that's 288 eggs.
Might repeat next week.

Believe it or not, this is the recipe I used. Just made 4 times the recipe.
  I did back off on the red pepper because I used my own (will increase it next time) and used dried peppers instead of fresh.
  The jar that I put in the icebox is just mildly spicy, BUTT taste OK. Coarse it only been in icebox overnight. Recipe says to wait 2 weeks before eating.

BeeJay, you make me wish I could eat eggs (I'm allergic). Those quail eggs look really good, and there's a source in town for them.

Bee Jay,  How many quail do you have and how long did it take to get that many eggs?

Also, how long will the eggs stay fresh so one can pickle?

  I have 3 dozen hens and 12 roosters. I am getting 28-32 eggs a day. If you keep the eggs in the house, about 2 weeks on the counter. Then keep in icebox for another month or so.
  Takes me about a week to gather that many.
  I still got 7 doz chicken I didn't sell last week and got 9 more doz since. I been selling 8-12 dozen chicken eggs a week.
  Reckon I need to start selling some quail eggs and hatching some.
